I was going to make chicken fried rice with brocolli, but I just got invited to a fish fry at the Church where my office is.  I don't eat the fish they're serving (catfish *ill*), but there'll be plenty of other things I'm sure and it'll keep me from having to cook. :thumps:

The secret to good catfish is to get all that mud out of their innards when you clean them.  :thumps:

Now, how do you fix your fried rice? Do you use converted rice and chill it overnight before frying it?

No sir.  I use regular rice and stir fry it in a little olive oil before I dump everything else in there and cook it.  Also saute' the onions, mushrooms and some minced garlic, and steam the brocolli a little before I throw them in there. 

I thought my bottom feeder joke was pretty dang funny! :tongue1:

I can't get myself to eat catfish.  When I was a kid no one ate catfish.  Oldtimers  said it was a dirty nasty fish.  Why does that fish have such a bad reputation?
