Help I need a recipe

I decided to start this thread for all of us  who  occaisionally decide to cook and need a hand. :devilish:


Anybody got a good recipe for peanut butter pinwheels?

I'd use real and expensive peanut butter to begin the recipe.  I tried using generic once for peanut butter cookies and my child about had a fit.

Peanut Butter Pinwheels

 
 
4-6 Tbsp. peanut butter
3 Tbsp. leftover mashed potatoes 1 lb. powdered sugar


Put mashed potatoes into a bowl.  Add 1/2 cup sifted powdered sugar and mix well until smooth and liquidy.  A few drops of food coloring can be added at this point, if you wish.
Keep adding sifted powdered sugar 1/4 - 1/2 cup at a time and mixing well, until consistency of Play Dough.  Form into a ball.  Divide in half.

Place half of the dough onto waxed paper covered with sifted powdered sugar.  Sift more powdered sugar over the dough, then cover with another sheet of waxed paper and roll with a rolling pin until thin.   Spread with a layer of peanut butter (plain or chunky).  Roll into jelly roll shape, then cut into 1/4 inch sections and place onto waxed paper or serving dish.   Cover and store in refrigerator until ready to serve.

If you screw up when making the jelly roll, you can always form the peanut butter/dough mixture ito little balls and cover with more powdered sugar.  Repeat for second half of dough.

Don't laugh, but I heard someone saying their wife or mother or somebody, made them with that icing that comes in a can...you know? How they do it exactly, I don't know, but maybe one of you gor-mets could do it, ya think?  :wig:

These are Irish pin-wheels, potatoes are the main ingredient just as rice is for Chinese pin-wheels. :roflmao:
American pin-wheels use powered sugar as the main ingredient, Suzi is Irish with a 2PM fuse. :wavie:

I'm Irish mostly- my mom is FBI- full blooded Irish as she and her cousins used to say- and my dad was mostly Irish and a little Scottish. He used to call us kids Irishmen with a fifth of Scotch in us. (Sorry to those that have already heard that story.  &kiss*)

I'm German-Irish. My dad's family came from Austria (but were of German stock). My mom's family is Irish.

Mother's side...french and German, grandmother came from France and Grandfather came from Germany.  Father's side.....been here a long time, Irsih, Scottish, Welsh and English.
